I love it when Fresh Squash & Green Beans go on sale for less than a $1 a pound!! We very seldom fry squash, its delicious…but not the healthiest way to cook it! Anyway, I promised the kids fried squash tonight! I usually use corn meal, but realized when I started that I was out of corn meal!!! UH OHH!!! So, I decided to try something new!! And it was delish…So I will not be using corn meal anymore! Here is the recipe
Fried Squash
Squash, I used about 8 yellow squash (99¢/lb at Publix this week)
Equal Parts Flour & Italian Bread Crumbs, mixed together well, I used about a cup of each
3-4 Eggs Well beaten (no water or milk)
Enough oil to fill 1/2 inch of the bottom of skillet
Salt & Pepper to season
Cut squash very thinly! (About 1/8 inch) Dip squash in eggs then dredge in flour & Italian seasoned bread crumb mixture. Heat Skillet on High until oil is hot, but NOT smoking. Turn down heat to medium. Add a layer of squash at a time, cooking until golden. (About a minute & a half on each side if you cut thin) Drain on a paper towel. Salt & Pepper to your taste as soon as you take them out of the oil.
***Tip: I had to teach my daughter tonight, so I though I would pass it on to you as well. Make sure & use one hand to dip in the eggs & the other hand to dredge in the bread crumb mixture! This really helps keep your hands from getting so icky and helps keeps the lumps out of the bread crumbs.
